As you know, I love soup. One of my go-to dishes is this Chicken Ramen Bowl recipe. However, when the summer heat starts climbing, a quick and easy dinner is on my mind. My family is easy to please but two things they really love during the summer are strawberries and salad. A few weeks ago I picked strawberries. It was a great time. But what do you do when you have quarts upon quarts of fresh strawberries? Make an easy strawberry salad!

Strawberry Salad with Chicken
- 1 tablespoon vinegar (red wine or balsamic)
- 1/2 shallot, diced
- 2 tablespoons extra virgin olive oil
- 4 cups mixed greens
- 1 cucumber sliced
- 2 cups strawberries hulled
- salt and pepper to taste
- feta or goat cheese
- 1 grilled chicken breast, diced
- Nuts (optional)
Stir vinegar and shallot together in a bowl. Add salt and pepper to taste. Pour in olive oil as you whisk to form a dressing.
Toss mixed greens and cucumbers in a large bowl. Pour dressing into bowl and toss to coat. Add strawberries, feta, and nuts and toss again. Top with chicken. Enjoy!
It’s really that easy! You can omit the chicken to make it a vegetarian dish.
A side note: we substituted the vinegar with a strawberry balsamic vinegar that we purchased locally and wow! the flavor was amazing! Here is a similar Strawberry Balsamic Vinegar to give you an idea of what we used. However, we have tried it both ways and the dressing is awesome either way. Another note: my husband added croutons because he wanted an extra crunch. We also used walnuts because that’s what we had on hand. One thing I love about salad recipes is you can customize them to fit your mood and what you have in the pantry.
